I’ve been trying to set up personalized spatial audio for the past two hours, I have only gotten it to work one time, and there was no done button, is it just impossible to use right now?

The second one :) It is totally possible. I just deleted and set it up everything again right now. The ok or done button only apppears once the scaning stage has been completed. Ask for sighted help, probably you are holding the camera too close to your face or pointing it the wrong direction.
It's doable
Make sure your ears are completely clear. Pull any loose hair back so that the sensor can get a good view when scanning both the front and the sides. It took me a few minutes for the scan to progress, but it's very doable.

hi when setting up the spacial audio for personal listening, I am confused, it acts like, it wants to scan my face, not my ears? the instructions make out it is scanning my face, with the front camera on the iphone 11 pro is that right? what is it meant to do then, when works? finally, I have the airpods pro 2 now, do I need do the head tracking, or has spacialised audio improved when watching say, apple tv content with the fixed setting again, what is the difference? I thought, and was hoping, spcaicl audio would be like a cinematic experience all around me, am I mistaken? on the first generation pros sounds never seemed to comef say the left, above, below or behind, unless I was just turning my head feeling stupid whereas, in the cinema, I know it has multiple speakers, but is the special audio say, with the apple tv content, meant represent this? a

You can't use iPhone SE (any version) to set up spacial audio customisation, no, but once set up on a device with a Face ID camera it will play spacial audio using your profile.
The process is to scan first your face, and then both your ears. It's annoyingly hard, but it's possible. I am astonished, though, that Apple felt it ready to let this out of the stable.

I also cannot get this to work. I know my bf cannot either. I've seen it fail on his end. and he is very good at the face ID thing and can do it in about 30 seconds.
Doable but really hard!
It literally took me 3 hours of trying off and on. With the first part where it does the facial scan, I gave up listening to the phone's instructions and just turned my head in a circle multiple times until it took. I can't even count how many times I started over because I got so frustrated with being unable to get my left ear scanned. Eventually I held the phone back a bit further, and this seemed to help. It just takes a ridiculous amount of time and patience.
