Could it be because you have CapsLock turned on as I believe the default setting is that when speaking capital letters it talks in a higher pitch. Try turning CapsLock off and I believe that should fix it.
This is normal behavior, regardless of case. If the switch for using pitch change is on, you should notice any characters you type being spoken in a higher pitch, while deleted text is instead announced lower. You can sotp the pitch change altogether by deactivating that switch found in the speech settings of Voiceover.
