Hi, is there a way when you receive a text message to have the sender and message contents hidden in the notification shade?

Go to Settings->Notifications and turn off notification previews on the lock screen. I believe that's the only way. You can also customize the notification settings per app, so you could modify them just for the Messages app.
You could also disable VoiceOver's setting to automatically read incoming notifications, I think it's in its verbosity subcategory, but that would still leave them displayed visually when they appear.

You can. Just turn off notification previews for messages. You can still display notifications on lock screen but you'll get the result you want and the sound
