You could try installing the app again. First, go jo storage settings, (or itunes and app store settings), and toggle off-load unused apps on. Then, go to the Mail app in storage and double tap it. Swipe until you hear a button labeled: off-load app and double tap it. Once that's done, off-load the Mail app into the cloud. The app will still be there, but it'll say Mail in icloud. Double tap to reload it. Then try opening it. Hope this helps!

Have you tried restarting the iPad or resetting it's settings? If that doesn't work, a restore through iTunes may fix the problem.
