You just do OTA update. over wifi. Sim card is needed only for phone activation, but if your phone is already activated, the update process is the usual way.
Your SE can still be used with no SIM card as a sort of glorified Ipod meaning that you can access your apps and browse the net as long as you have Wifi. You cannot make phone call though. To update your phone, go to settings, general, software update.
