Hi there. OK so bit of an odd question, but when for example an iPhone or iPad is connected to an audio interface, IE DJ mixer, is there anyway to stop voiceover defaulting to this output? I am basically looking to update my DJ set up using an iPad pro, but worried that Voiceover is going to be coming out of my PA system, obviously not ideal for a wedding gig! lol. Thoughts please? I wish it .worked the way you want it to! I am a keyboard player, and wanted to use my iPad Pro as a sound module, loading Ivory and other sample collections, and triggering them with a midi keyboard through an audio/midi interface, which is essentially what a DJ controller is. I hoped I could assign VO to the iPad speakers, and my samples to the external, but just like a Bluetooth speaker, it's all or nothing. The internal audio seems to get disconnected when you plug in an external interface, so there's not even an option to route VO through the alternate. Not sure if things have changed in iOS11 though, but it's doubtful.
no braille display?
For those "all or nothing" times, I found the best option was to in fact use a braille display if at all possible. This is where I think Mac OS still shines, as you can still use bluetooth speakers and your internal audio at the same time, though I doubt iOS will be getting like that in the near future. Sorry I can't be of more help though.

Thanks for the comments. Basically after playing with my phone and iPad with a sound dock, i have reached the same conclusion, the iPad isn't going to do the job for me on this occasion. Braille display is a good shout, however if i am spending the money for one of those, i am just as well getting a macbook air and sticking with what i know. with an increasing number of iPhone and iPad users connecting to dock's and audio interfaces, think apple have missed a trick there with the audio routing issue.
