Request that those who are hearing a beep sound when using Bluetooth headset with iOS 11contact apple.com/feedback to report the problem. I was urged to let them know about it so they can look into. I did report my issue with using Bluetooth headset in my iPhone 7 with iOS 11.

Thanks for sharing. I thought I was the only one with the problem since I couldn't find any discussion about it anywhere else.
I have an iPhone 5s and LG HBS-750 headphones. I can make the beeping stop by using the volume on the headphones. I turn the volume up all the way with the headphone controls and then bring it back down and can eventually get the beeping to stop. If I forget and adjust the volume with the volume buttons on the phone then the beeps start again. I'll report this to apple.com/feedback.

Beeping and losing speech
I’ve been experiencing this since iOs 10 with my iPhone 6s and Philips shb5900 earphones: it would beep while typing and VO would mute right after stopping music or podcasts.
