Hello,
I'm wondering if anyone else has had problems/work arounds for the latest version of skype on the iPhone. The layout has completely changed and I found it much harder to use. Also, I've found that I cannot read with voiceOver what is typed in the edit field of a conversation.

Yes, I am experiencing this too. I posted a comment under Skype's app entry a day or 2 after I saw the new version. And to your other question, no I'm not aware of any workarounds. If you have an older version of the app in iTunes, you may be able to roll back. Otherwise, you're stuck until Microsoft fixes these bugs.
Not just you
I am having the same issues. The interface is a bit weird, just different, and you can get used to that. But the typing is a different matter, especially when it makes that sound every time you type something, as if you were at the end of something and there were no more options.
I hate
I hate this latest update, and said as much on the MS forums. GOod lord it's bad. I really hope that MS fixes these bugs. If they don't, I may end up switching to something a bit more accessible.
Go and look
Go and look at this app on the App store and all of the comments. This app used to have a five star rating. It no longer does. They want to integrate SnapChat and a bunch of other features with this update that I'm sure some of us would care less about. If you really want to stop this from updating, turn off the automatic updates for all Apps and just update the one's that you use alot of until this gets fixed. Whenever Microsoft chooses to do that very thing.
I got locked out of my skype.
I got locked out of my skype. And when I ing ablc to log back in the interface was completely different. How do you turn off auatomatic updates? Microsoft always changes the Skype interface, and i feel like every time i get use to it, they change it again.
You aren't the only one
The new version of Skype is a real hot mess for us. You better get your message write the first time or else, because that whole idea of editing your response/ Forget that old school way, now it's once and done. Doesn't look anymore visually appealing either in my opinion. All we can do is send our feedback.
