I have an iPhone 5S which I'd decided I would jailbreak once it was out of warranty. The posts I've found on how to do this are a bit old so if anyone has up-to-date info on the most accessible way to do this, I'd appreciate it.
I have a second problem which is that I upgraded the iOS to 10.1 and am really really sorry I did. It just slows my phone down too much and I was quite happy with the last version I had of iOS 9. Is there any way to go back? Any way to use the jailbreak process to go back, well, just any options at all?

I hate to bring you the sad news, but there's no way to downgrade. Even if you were to jailbreak a device, Apple has a system in place where it doesn't let you downgrade to iOS 9 even if you wanted to. This is to stop people from using unsecure versions of iOS.
Stay on 10.1 for now
Currently there's no way to do either a downgrade or a jailbreak for iOS 10, however rumors say there's a 10.1 jailbreak coming very soon, it's more likely than a 10.2 jailbreak. That in turn could allow you to downgrade back to iOS 9 if you wish.

Piotr - that would be good news if the jailbreak then allowed me to downgrade. How does that work? Is there a specific place one should be looking for info on new jailbreaks, or do you just google it and go with whatever comes out. I'm guessing not. Where do you look for jailbreaks?

You can find Meny jailbreaking news on www.idownloadblog.com you can also download the tools from there. Just to let you know, even if there was a jailbreak for iOS 10.1 or the latest public firmware. It would still be impossible to downgrade to iOS 9. In order for you to downgrade, you have to save what are called shsh blobs. It's also not an easy process to do.
