The keyboard shortcut for screen curtain is VO Shift f 11. I don't know what the mute Voiceover command is.

3-finger double-tap for mute. not sure if there's a keyboard combo for it.

I think there is no keyboard shortcut assigned by default to mute VoiceOver speech in OS X 10.11, but you can use the keyboard commander to create a HotKey that will do it. Search AppleVis for the words keyboard commander, and you will find a number of guides and at least one podcast introducing the keyboard commander. Follow the steps in those guides, and when you get to the step of adding the keyboard command, you will find the "Mute VoiceOver toggle" command in the Audio section of the Commands menu.
