This issue really bothers me. For a few times, while VoiceOver was turned on, I did some gesture and the iOS built-in Music app started playing music. For the first few times, I had no idea where the music came from, and therefore, didn't know how to turn it off. I ended up re-booting my iPad.
Two days ago, it happened again. It took me a lot of time to discover that the built-in Music app was playing. After opening Music, I hit the "Pause" button and music stopped.
But I still don't know what gesture made it to play. Does anybody know? Also, what is the gesture to stop Music once it started playing? Is there a way to disable Music so that it doesn't happen again?
This was annoying, because I was in the middle of something, and wanted to push a button (double-tap), or turn a page (3-finger swipe), or some gesture. And by accident, my fingers must have done something slightly different, and the music blasted out of nowhere.

The music issuing from the
The music issuing from the iPad may have come from your collection of songs or iTunes Radio, if you played a specific station. While to my knowledge there isn't a method to stop the control from working this way, there's fortunately an effective command you can perform to interrupt the audio. Just do a two-finger double-tap and at that point, the music should immediately quit playing. Hope this helps.

Thank you very much for the suggestion. But it will stop VoiceOver as well.
By the way, I had never opened the Music app. Never wanted to listen to any radio or any iTunes stuff. That's why, when it happened the first time, I was startled, not knowing where the music came from.
By the way, I am on iOS 8.3.
It does stop voiceover.
Hi. The two finger double tap does stop voiceover, but hyou can just swipe left or right and use voiceover again with no problem. If you want to start music again, just double tap.
A hint...
Be sure you do not have another finger touching the screen while doing a one finger double tap.
If you do a one finger double tap with another finger on the screen, the iPad will interpret this as a two finger double tap.
This is known as split tapping.

That's exactly what happened! I tried this "split tapping", and the Music app started playing.
With this knowledge, I also found out why it happened in the past: When I use my index finger to tap, I usually curl up all other fingers. The knuckle of my little finger sometimes gets too close to the screen, and becomes the "second finger".
