When you launch iBooks, you should land on the bookshelf table. Interact with that and find the book you want to read. then. press enter or double tap on it to open it.

Hi Sarah,

The first time you go to the Ibook store, you should be asked to sign in to iCloud so your books wills how up.
Press VO plus left arrow and interact with the table. Put the VO cursor on either all or books.
Stop interacting with the table.
Press VO right until you find the bookshelf scroll area.
Interact with that and select the book you'd like to read by pressing VO plus spacebar or double tapping it on the trackpad.

As for reading, press VO plus right arrow until you hear which page you're on. It should automatically start reading.

Hth and let me know if you have any further questions,
Liz
