Guide or tutorial on text editing with Voiceover on iPhone

Hi,
Can anyone point me to a beginners tutorial on text editing on the iPhone using voiceover? After a recent iPhone purchase for my wife we've together become comfortable with generally moving around the phone and sending texts using dictation and now want to turn our attention to longer documents in e-mails where we anticipate that we're going to need to be able to do some editing to correct our dictation mistakes. I've found a couple of guides on the site with basic voiceover compounds and some on the use of the rotor (which i think is going to be important for text editing?) but I wonder if anyone's written anything specifically for working with text - finding and correcting spelling mistakes, etc.
