Now I have all my apps on my new iPhone 6, how do I change some of the folder names? I'm having a clear-out and also want to change some of the folder names. Do I double tap on the folder to open it and then double tap again on the folder name once open, delete the name and start again?

Double tap and hold the folder name text field
Open the folder, select the text field for the folder name, and then double tap and hold it.
Don't forget
Once the text field is editing, don't forget to hit the "clear text" button. Also, be sure to check that the text has actually cleared once you hit the button; the function seems a bit buggy in iOS8, most noteably in the iTunes Store.
another method
The method described above doesn't really work for me for some reason, but you can also double tap and hold on a folder, and than open it, than the text field will be editable.
Choose the folder, do a two
Choose the folder, do a two finger double tap & hold. You will hear three sounds & the edit box for the folder name will appear. Make sure to clear the text. Make sure to save.
