The lag I’m experiencing with my second-generation AirPods Pro seems to be related to VoiceOver rather than the AirPods themselves. On my Mac, there’s a significant delay when using VoiceOver, but I don’t experience that delay when using TurnOver with the same AirPods. I’m also experiencing lag when using VoiceOver on my iPhone.
The delay is bad enough that it feels like I’m using cheap Bluetooth earbuds instead of a $200 pair of AirPods Pro. It’s frustrating, especially because I haven’t noticed any improvement.

Not seeing this on my 3rd gen AirPods Pro. Seems unlikely as you're seeing it on both Mac and iPhone, but could it possibly be voice-specific? If you haven't already, worth switching to a different voice to check.
Another option would be to reset the AirPods.

I always found delay on mac
Stopped using airpods for a while as I hate earbuds even though the proe threes are great, but I always found it weird how ios has blazing fast low latency meanwhile macos had so much lag the airpods felt like any other bluetooth headphones from 2015. Though strange you're having latency on the iphone. I wonder if it's an ios 27 thing.
