Hi I'm working with a gentleman who is blind and also has a developmental disability. He with his job coach are trying to figure out how to easily generate invoices from his iphone and email them to his customers. Does anybody have any suggestions re: useful apps that he might be able to use to accomplish this?

This can be done fairly easy with AI applications
There are quite a number of AI applications on the iOS App Store. Below is a nice example of a mock invoice I did using Google Gemini for iOS.
I simply asked it to help me create an invoice, and Gemini gave me a list of information that it required. The example below has mock information, of course, as this is just an example of what you can do.

Legal stuff
It's likely not the same everywhere, but here in Portugal, invoice software requires certification in order to be added to a valid signing authority's chain of trust to generate valid digital signatures on financial documents, so although everyone can get invoices issued for free at Autoridade Tributária's website, which is roughly equivalent to the Internal Revenue Service in the United States, all the other options are paid due to the mandatory certification requirements. Therefore people should ensure that their invoices meet the legal authenticity requirements in their respective jurisdictions, as otherwise they risk facing an accusation of tax evasion.
Re: legal stuff
Just to add to this, make sure that feeding customer info to an AI doesn't break data protection rules in your juristiction if you choose to go that route.
I usually either use a template for generating invoices in Word or Pages, or a localized website here in Denmark that lets you generate invoices with the required information on it.
