I know there is character AI in Kindroid, but I was wondering if there are any other apps or websites like these? Where you can build your own character and/or role-play.
Dungeons & Dragons Beyond has an application for iOS, that will allow you to build a character for tabletop gaming. I'm not sure if that is exactly what you were looking for, but if you want something for building an RPG character, it's at least something to give a try.

AI dungeon.
It doesn’t work very well and you’ll have to play around with voiceover a lot, but it works decent.
