Hi there,

You might want to consider using Local Chat.

What specific security features are you looking for, on what devices? If both you and your GF use Apple devices to communicate, you should be able to use iMessage and FaceTime, which include features like end-to-end encryption and contact key verification, among other things.

One thing to note about iMessage on iOS and iPadOS, however, is that by default, messages are backed up as part of your iPhone or iPad's iCloud backup, so to ensure that the backup is also end-to-end encrypted, you must enable Advanced Data Protection in Settings (System Settings on macOS) > [your name] > iCloud > Advanced Data Protection. For more information about this feature, check out the Apple Support article "How to turn on Advanced Data Protection for iCloud." Alternatively, if you don't want your messages to be backed up in iCloud at all, you can remove Messages from the backup in Settings > [your name] > iCloud > iCloud Backup > [your device name], and toggling the "Messages" switch off.

Signal and/or iMessage are probably your best bet. I'd say Telegram, but compared to the Android version the iOS version's accessibility is quite lacking.
