I opened a message and tried to copy the sender's email address. Double-tapping brings up several options, none of which are "copy". You could create a new contact, navigate to the email field in the contact form, select the email address, and copy, but there has to be an easier way.
1. Open a message.
2. Starting from the very top and swiping right you hear the following:
• The name of the email folder, back button i.e. Inbox back button.
• Previous Message
• Next Message
• The name of the sender or "Siri found a new contact", followed by the sender name on next swipe.
3. Double tap on the sender name.
4. You will be in a basic Contact Card, navigate to the person's email.
5. With focus on the email, use the rotor to find 'Edit', then swipe up or down and double tap on copy.
Congratulations, you now have the sender's email in your clipboard. You can also email from this card, add to contacts, etc.
The heuristic typically uses the recent address, but not always. It's ugly, honestly, and it's not your fault, but basically, the contact card is a synthesis of what the system already knows; if you have a frequently-used address, for instance, then it may end up being suggested in place of the one that was just used to open the sheet. So in general the first one will work, but not always. I dunno why iOS doesn't make it easier to just show a detailed view of the message headers, but here we are.
