I am using an iPhone 11. I make sure that the race to speak is switched off, but when the phone is locked and I just touch the screen with one finger it speaks. Is there someway of stopping this, and where?
It sounds like you're saying this always happens, like your phone never locks the screen when you push the lock screen button on the side. I've had an issue with an SE 3G where it wakes on its own every so often. I don't think it says anything when it happens, but I'll touch the screen and the phone is awake and on the lock screen. It isn't any of the settings or raise to wake and all that. Started with iOS 17.
That doesn't sound like your issue, so I have know idea what yours is. But if it is, it's happening to mine too.

If for whatever reason you decide that you don’t want to have Tap to Wake enabled, you can turn this feature off. Here’s how to turn Tap to Wake off:
Turn off Tap to Wake
1. Open the Settings app on your iPhone.
2. Scroll down and tap Accessibility.
3. Tap on Touch under the Physical and Motor section.
4. Toggle Tap to Wake to the Off position.

Yep It’ll be tap to wake I reckon.
I have that turned on so that I can wake the phone without having to press the side button. I find it useful.
Home gesture?
It sounds like its the home gesture introduced in the iPhone X models. Possibly you're Haptic/3D Touch is super sensitive?
