Hi,
I'm looking for a good app to record in stereo on iOS that won't send my speaker output to the earpiece, in the event I'm not using a headset. Also, it would be cool if the recordings could auto upload to iCloud drive or dropbox, but that's not a dealbreaker. I'd just like to be able to record in stereo with the built-in mic, and preferably not have voiceover come out of the earpiece while recording, as I tend to have a tough time focussing on it to stop recording or otherwise control the phone while recording in loud environments.

Try Just Press Record
I use an app called, "Just Press Record" which allows for recording in stereo. Unfortunately, it does send VoiceOver to the ear piece, however, you can do a two-finger double tap, a magic tap, and that can start or stop recording. Not perfect, but better than guessing that the correct button is selected because it's hard to hear VoiceOver.
Another good one hokusai
Another good app is Hokusai 2 which will also let you record in stereo
And it also has audio editing features as well
