Hi. For searching for text, you can define touch gestures for advanced navigation commands in setting>accessibility>voiceover>commands>touch gestures>advanced navigation.
Also when inside touch gestures, you can define a touch gesture for "show item chooser". smile. Item chooser should let you search an entire web page.
VoiceOver item chooser which by default can be brought up with a 2 finger triple tap is how you are supposed to find things, but it rarely works. Seriously consider using a keyboard whenever you are likely to need to find things. Command+Option+F really does work.
I really wish Apple would make it possible to bring up the virtual keyboard to do a real search. I tried assigning a gesture but it doesn't work without a hardware keyboard. Makes no sense especially that it can't be done with braille on-screen input.
Safari has an in-page search feature that works fairly well with VoiceOver. VoiceOver find with a keyboard works better, but if you can't do that it's better than the item chooser in Safari.
