I'm looking for a Voiceover friendly sound editing and multi tracking app for iOS that will also record in stereo when using the Senheiser Ambio Smart Headset. I've not been able to find that many actual multi tracking and sound editing apps that are Voiceover friendly and that will do what I want them to do. I want to be able to do a voice recording that could be either stereo or mono, depending on the mic I'm using, and then be able to track in music and sound effects, sort of like producing an audio drama, but so far, all the stuff I have either isn't built to do what I want it to do completely, or doesn't provide stereo voice recordings. I tried the GoldWave app, and its voice tracks are all mono, and I can't find how to change that. I don't think things like Garage Band do what I'm after, and I can't think, off the top of my head, of another app that does. Any help would be appreciated.

On the iPad or iPhone, you…
On the iPad or iPhone, you might check out Ferrite and Hokusai. Both are accessible, and one of them should let you do what you want to do.
I Have those Two.
I've not really been able to figure those two out but am going to play with them and see what I can get them to do. HOpefully one of them will do more than I've been able to get Bacpkack studio to do.
I think backpack studio has…
I think backpack studio has great potential but for doing your podcasts live. But when it comes to just assembling already existing audio, I don’t see it really working for me.
Another option might be GoldWave Infinity. I used to have the GoldWave app that was developed for iOS, but deleted it, and now that I want it on my iPad, I can’t download it anymore.
I was going to use Ferrite last night to put together a program, but the file would have been to long for the free version.
Why not garage band?
I noticed you said you didn’t think garage band would accomplish what you need, but why is this? Especially recently, I’ve found it to be quite voiceover accessible on my iPhone and iPad, and they have definitely added more pro audio features lately. I’m pretty sure you can choose From any available mono or stereo input connected to your device. If you haven’t tried it already, it’s at least worth a shot. I’ve used it for all kinds of things
