I am looking for an accessible audio editing app for IOS.
I don't want to edit Music, so I don't think GarageBand is fit for purpose.
Does anyone have any recommendations?

It's free, with an in-app purchase, to unlock the pro version, which, if you like it, I'd highly recommend.
I make this recommendation because you're getting some really nice features and supporting a great developer, who clearly cares about accessibility.
I made the upgrade a few months ago, & couldn't be happier.
GoldWave for iOS is a possibility, unless you're trying to record from a stereo source, in which case, you'll finish up with a mono recording, as I've not yet found a means to record in stereo with it.
