Hello. Hope all is well. Quick question... how do you tell your Mac to call a person using FaceTime or whatever app you want? For some reason it keeps opening Skype, which I don't want to happen.

The FaceTime app, or the Contacts App
You should be able to use the FaceTime app on the Mac, or the Contacts app.
You need the Mac and an iPhone to be signed into the same Apple ID, and there is an option in the iPhone settings that has to be enabled to allow calls to be started and received on the Mac.
Default app for calls
You may also want to check that FaceTime is the default app for calls on your Mac. To do this, open FaceTime and choose FaceTime > Preferences (or press Command-Comma) select the Settings tab, and choose "FaceTime" from the "default for calls" popup menu.
