Try moving VoiceOver to an audio device other than the system's default. The option is in VoiceOver Utility -> Sound -> Output Device. This may work. I haven't tested with Zoom though.
It works! It's a bit weird and strange, but here goes. (for anyone trying to figure this out in the future). Thanks to the suggestion above, and it takes an extra step.
1. Start zoom. Start your screen share. Try to arrive a few minutes early to the meeting to avoid any VoiceOver interference while you're doing the next step.
2. Zoom will create an audio device called "zoom audio device". Theoretically that's basically the same as your current output audio device.
3. Change the VoiceOver audio device to the exact same device that you're using in VoiceOver utility. Just don't pick the "zoom audio device" which would be selected, but pick the main name for whatever you're using, for example "macbook air speakers".
and voila! You'll have zoom and VoiceOver and whatever you're sharing coming out of the same device. Zoom will only send out the stream of whatever you're sharing, which is exactly what you want.

yep. by default I have vo already set to my device I use with out having it set as default so that step is easy for me to negate.
