Is there anything I can do to make my AirPods respond to taps and holds as advertised? Using an iPhone XsMax.

The Airpod Pros don't use the tap and hold model, you need to physically squeeze the stem, it has an actual click feel to them, similar to the earpod remote. Single shord squeeze for play/pause, two squeezes for next song, three for previous song. You can set up the squeeze and hold for either swapping modes between ANC or transparency and set up one of them to be Siri by doing this as well.

Hope this helps.
