I'm coming from High Sierra and going to Catalina. My assumption was I would use a USB drive to transfer my iTunes media over, but I'm not sure how to finish this task on the Catalina side. I know all the iTunes media is separate apps now. How do I get my content in the correct spots? As an alternative, is it possible to use my iPhone to transfer everything? Thanks

Just updating the OS or a new computer?
I'm a bit confused by your post. If you are simply updating the OS on an existing Mac, you don't need to do anything. Your content remains on the computer and the OS is updated.
If you are getting new machine with the more recent operating system, Apple has the ability to transfer all your data from the old machine to the new. More can be provided on that path if needed.
New system
It is a new system, but I did not want to migrate most things. That is why Iām transferring my iTunes library manually.
