Let’s say that I write a word and then make a space. When I delete the space another word pops up but I’m usually still trying to double tap the delete button and it ends up selecting the word that popped up…
This is really annoying and I can’t seem to find a way to shut this off.
Is it even possible? If so how?

maybe disable all autocorrect and word prediction features?
I know that many people like autocorrect and word prediction, but I find those features to be very confusing and unhelpful, so disable them as soon as possible when I get a new device. I think everything is under general and then keyboard. Maybe someone else will have better suggestions, but that's my best guess for what it's worth.

Also try unchecking "Check Spelling While Typing" under Edit > Spelling and Grammar in the top menu of whatever app you happen to be editing text in. :)
