Say-All command somehow plus others I can't really do with two fingers down or up on the screen

Hello,
Is there a possible say-all gesture on all watches, including the series 2? Also, how the heck do you actually get to the notifications/control center with those two finger swipes down and up respectively? I can't seem to do it, so I just look for the time and swipe down and up with one finger.
