I've got a Eufy Smart Scale P1. The app could be easier to use, but it supports connecting to Apple Health, and you can check the different outputs in the Eufy app with VoiceOver too. A good trick for it is to use the "watch item" gesture in VoiceOver to keep tabs on when the weight changes or whether the scale is connected.
I'm not entirely sure what the difference is, it's been a while since I bought my P1, so the p2 might just be a newer iteration.
You could probably set it up without sighted assistance. It does need batteries, but those are fairly easy to insert if you've done it before.
Sorry if I was a bit unclear with the watch item gesture. VoiceOver has a function to watch a static item and announce when it changes, but there's not assigned a gesture to it by default. I think it's called "start watching item". I've assigned two-finger quadruple tap to it. This will make VoiceOver watch the static text for change, so you can track the weight while it's weighing. Put VoiceOver focus on the item you want to watch, then perform the gesture you set up.
