You can't use an iPhone as…
You can't use an iPhone as an external mic, only an external camera. The Mac Studio or Studio Display will have its own mic array. Alternatively, you can connect an external mic.
Here's an article that can help you troubleshoot:

I have found that when I configure everything, a simple reboot of the phone and Mac help the two see each other.
Incidentally, I use an external USB C mic and my iPhone camera for TV hits twice a month and it works great.
It can be a bit tricky, but…
It can be a bit tricky, but I think I can help you out. First things first, you'll want to make sure your Mac is up to date with macOS Ventura, and your iPhone is rocking iOS 16 or newer. They also need to be on the same Apple ID.
Now, on your Mac, dive into the System Settings, and in the Sound section, there's a tab for Input. Your iPhone should pop up there as a "Continuity Camera" option. Choose that, and voila, your iPhone is now your Mac's microphone.
For the webcam part, Continuity Camera should let your iPhone play the role of a webcam in apps like FaceTime and Zoom, either wirelessly or with a cable. If FaceTime's being a bit stubborn, a good old restart of both your Mac and iPhone usually does the trick.
Also, Apple Support has a great step-by-step guide at https://support.apple.com/guide/mac-help/use-iphone-as-a-webcam-mchl77879b8a/mac. Might be helpful. Hope this gets everything up and running smoothly!
