It can be done, but it's complicated. And by "Complicated" I really mean that you can pull apart the installer and reverse everything it does using Terminal. This has been necessary in the past in order to downgrade. But it's almost easier to just reinstall the OS.
So my advice is: unless you know you really need to, don't.

uninstalling iTunes
If its on windows, iTunes can be uninstalled conventionally. If its on the Mac, unfortunately it cannot be uninstalled as it is built into OS X.
