I’ve been researching this for a while. How to delete apps from the doc and uninstall it from the launchpad on Mac? Is there a shortcut that works with voice over?

Hi,

You can't uninstall an application from the Launchpad using VoiceOver, or at least I don't think so. To do this, go to the Applications folder with Command + Shift + A, then press Command + Delete on the .app you want to remove.

Be aware that residual files, such as the application's preferences, may remain.

To remove an application from the Dock, use VO + Shift + M on the application to bring up the context menu, then in the Options submenu, select "Remove from Dock." Note that this will not uninstall the application, just remove it from the Dock.

There are some cases where moving an app to the trash triggers behaviour in the system to uninstall companion components of an app, such as system extensions. I wondered, therefore, whether Finder now correctly uninstalls Mac App Store apps, because it certainly didn't in the past. Even now, the behaviour with extensions only works when moving to Trash, not deleting immediately (Command-Option-Delete instead of just Command-Delete for Move to Trash in Finder).
