Syncing my iPod Touch (fifth generation) with my Mac Mini.

First of all, is there an extensive tutorial on how to use iTunes 11 with a Mac and VoiceOver? I am trying to sync my iPod Touch and my Mac Mini. Whenever I connect the iPod to the Mac I get the message from iTunes: "All of your songs are unchecked." I'm not given the option to check them. So, what do I need to do? I would also like to learn how to sync email, etc. I have learned so much from you guys! I would have never even considered buying a Mac or Touch without you being here for all of us! Thanks! I forgot to mention I am running Mountain Lion.
