Markdown is a text-to-HTML conversion tool for web writers. Markdown allows you to write using an >easy-to-read, easy-to-write plain text format, then convert it to structurally valid XHTML (or HTML).
Thus, “Markdown” is two things: (1) a plain text formatting syntax; and (2) a software tool, written in >Perl, that converts the plain text formatting to HTML.
Pandoc allows you to take markdown and convert it in to other formats besides HTML. I use it to convert Markdown to .docx format. Here is the link to the Markdown homepage for more details.
You don't say anything about whether this is professional, for school, or personal. The answer matters. For scanning, Fine Reader Pro for Mac is the best, but it's costly and doesn't allow quick review of the text in the app itself. Prizmo might be good enough for reading mail, etc., but not for 99% accuracy requirements. Best is probably KNFBReader on IOS, actually, or on Windows. Goes on sale sometimes. For writing, have you looked at the app directory and searched the forum? Lots of suggestions out there already. If it's personal, then there's frankly nothing wrong with text-edit. People around here mention Mars and Drafts a lot. I use Ulysses, but now it's expensive. Pages, also free, works about as well as anything and is what I would recommend overall, since it can open and save Word docs successfully. Microsoft Word is a shambles because of some quirk with Sierra that keeps moving the focus out of the page-level editing mode unpredictably. For audio editing, again, look at the forums and app directory. I assume you mean audio editing, not necessarily recording from a microphone (where iphone does a good job). There are some pricy accessible apps recommended, and Audicy (I'm misspelling the name) is at least aware of accessibility issues and says its next version will fix existing problems. Meanwhile, they have an old version for Voiceover users to download. Personally, I boot into Windows to use GoldWave for audio editing. I assume you know about GarageBand and have discarded that option for whatever your project is. HTH
