Question About Multitrack Recording

I have been using Amadeus Pro for many years to produce my podcast and some other audio content. I have a Behringer XYNEX Q1202 mixer, which is a analog mixer with a built in USB interface. It has 12 inputs (4 mono and 4 stereo) and a 2 channel (stereo) output. When I have a guest, I pan myself hard left and my guest or guests hard right. I then separate the two stereo channels into 2 tracks for editing. As the format of my podcast is evolving, I find myself getting into more situations where I have multiple guests on a podcast. I find it very helpful to be able to have each guest recording to their own channel. With my current setup, I have only to channels to work with. I am considering the Behringer U-PHORIA UMC404HD audio interface, which inputs and outputs 4 channels. My question is this. I know that Amadeus Pro can edit a file with as many tracks as you like. However, I cannot figure out if it can record more than 2 channels simultaneously. Is it capable of doing this? If it cannot, can someone tell me an accessible app (Voice Over friendly) that can do it. I know that Garage Band can do multitrack recording but I would prefer to stay away from it because, from what I gather, it seems very difficult to use with Voice Over. I just need an app that can record the audio. Once I get the audio recorded, I should be able to load it into Amadeus to edit it.
