I finally got around to trying iPhone Mirroring. Sorry, what can I say, it's been a long several months.
Firstly, if you ever plan on doing this, then try it when you have some time. You'll need to enter passwords and poke holes through security, including unlocking your iPhone. Waiting until you need it is not an option.
Secondly, I was surprised to discover that I had to enable WiFi on my Mac to get this to work. apparently, a high-speed ethernet connection isn't good enough? Picture me scratching my head.
Once I got everything working, it worked quite well. I discovered the home gesture is Command+1, for example. VoiceOver, music, audiobooks, etc., all worked as expected.
But, while using my iPhone through my computer, I occasionally heard VoiceOver talking on my iPhone, such as reading the time display. I put the phone to sleep by pressing the physical side button, but as I continued to interact with the phone on my Mac, the issue persisted, with VoiceOver periodically announcing the time.
I'd be interested in hearing how this feature works for others. Maybe some of this klunky stuff I'm seeing, such as the WiFi requirement and VoiceOver announcing the time, has a fix.

I tried it too and it's unusable / very cluncky in practice to use. The app switcher is a nightmare, we get the horrible mix of the worst of mac vo intereacting with ios ui sent through apis.
