As the iPhone 8 can run iOS 16, I wouldn't expect Apple to end software support for it until iOS 17 in 2023 at the earliest, more likely in 2024 or later based on Apple's past behaviors when dropping software support for a device.
This year Apple dropped both the iPhone 6s and 7. The 6s was not a surprise to me but I thought that the 7 would at least get iOS 16 and that would be the end of the line. Based on that, I won't be surprised if the 8 doesn't get iOS 17 next year. I hope to be proven wrong.

As this year dropped support for iPhone 6S (Plus) and 7 (Plus), following that trend, both iPhone 8 (Plus), X, XS (Pro) and XR will get major updates ending on iOS 18.
