I have "read notifications on lock screen" turned on. Now, in iOS 18, I can see one notification, but then there is a "show notifications" button I have to press to see the resst. This is super annoying!!! Can I make this show all notifications withouthaving to first press a button?

I do not remember exactly what version of iOS this started, but it has been like this for quite a few versions. Alternatively, you can go into Siri settings and enable speak notifications. You will, unfortunately, have to enable which app you wish to speak notifications on, but once you set it up, it works very well. As this is a Siri feature, and not a VoiceOver exclusive feature, it works even if VoiceOver is disabled.
Just be sure to disable having VoiceOver read aloud notifications on the lock screen. Otherwise, you will get notifications read aloud twice, once by VoiceOver, and once by Siri. Just a heads up.

I believe the "Show notifications" button was introduced in iOS 16, and is intended to reveal the Notification Center, the panel that shows all notifications, whereas notifications received since the iPhone was last locked appear directly on the Lock Screen.

No, this is the bug where all notifications are stacked. This is still not fixed and I doubt now it will be before iOS19. Basically for some like me, you can't view them as a list on the locked screen no matter what settings you have. Oddly, on an iPhone 14 they seem to work as normal. I'm on 15 pro.
