I would like to buy a scanner and software similar to Openbook. Since I''m assuming Openbook still isn't compatible with the Mac. From what I read, Openbook allows you to fill scan pages and edit them... A DR office form for example. PDF forms found online. I'm looking at ABBYY Fine Reader Pro or DocuScan Plus. Do either of these allow batch scanning or the ability to edit scanned text?

I think DocuScan lets you scan the text, convert the text into a certain file and edit the text in that file. Theres also an app for mac called Prismo which does basically the same as docuscan plus. I know prism lets you batch scan files, but I don't know how to do that with DocuScan. For instance, I OCRed a bunch of pdfs with prismo, and I am not sure how to do that with Docuscan plus.

Fine Reader Pro
I use Fine Reader Pro, though I have used DocuScan in the past. Fine Reader allows you to scan to an MS Word document for example, which you can then edit. I also found recognition to be faster than with DocuScan, and more accurate. If offline recognition is important to you then Fine Reader has that, whereas DocuScan I believe requires you to be online as the server does all the recognising for you. if you're using your Mac on a train with dodgy wifi, or with wifi that many many people are using, for example, this becomes an important factor as your recognition with DocuScan will be very slow. For the avoidance of doubt, Fine Reader is pretty much accessible, apart from the tools which allow you to draw text and scanning areas but to me those aren't important. You can batch scan with Fine Reader too. i read elsewhere on this site that there was an accessibility problem with that process, but there isn't as far as I can tell.
