I am testing an iOS app on my iPhone for accessibility. I need to make videos to show VoiceOver users how to use the app. I'm looking for an app which will let me pair my Windows machine to my iPhone so the video will show what is on the phone screen. I know this isn't completely an iOS question, but would appreciate some help.

Screen Sharing
With the advent of IOS 11, screen sharing with or without audio included is a possibility. This means you can demonstrate and record the demo right on your device. Otherwise you'll need a way to mirror what's on your device's screen to your PC. There are certainly apps out there that do this, and I believe some even record. I can't recall exactly which ones are out there, but google could tell you because the great google knows all.
