Hello: I just organized all my apps into folders. My question is if I do a icloud backup, and I get a new phone and restore from that backup will it put my apps on the phone organized in the folders the way I had them? If not can someone tell me how to keep my organization in case I need to restore my phone from a backup for some reason? Thanks in advance.

Yes it will. If you restore from a backup, whether that be iCloud or iTunes, it will put everything back in the same way.
The only time I can think of where you might need to do a little bit of fixing up is if you get a different size phone which fits a different number of icons on each screen.

It will put them as you had them in the icloud back up folders and all. Iv'e done about 20 restores due to beta testing so I have had experience with such.
