I've never heard of such an option. The only thing I know is you can add webpages from Safari to your homepage by tapping "Send to" in the tabs list and selecting the homescreen.
But maybe that might just be one cool feature to wish for in iOS 15. After all, they did the "conversation pinning" in the Messages app, so why shouldn't they just do that in the Phone app and for contacts to pin onto the homescreen.
The only method that could bring you to your expected goal is to place a shortcut via the "Shortcut" app. Here you have the advantage of being able to set it up according to the actions you are most likely to do: Call the contact, read Emails from that contact, send a message... Or simply display the contact within the Contacts app! So just give it a try!
