I am looking for an accessible/reasonably accessible app that is focused on world / international music. It seems that most music apps have very little selection in the way of world music, whether it be in general or regarding specific sub-genres such as Greek Music > Greek Pop or Greek Traditional.
Does anyone have any recommendations for an accessible dedicated world music app with decent selection/variety both in terms of countries and genres?

Have you tried using something like Tune In or OoTunes? I haven't used them recently, but they used to have listings by genre that included World Music stations.
There is also Shoutcast
Shoutcast also has world genres to choose from.
