I know how to add contacts to my phone list with the add contact button when I am in contacts. However, is there a method to add contact from either "recents" or "messages"? My wife has difficulty typing numbers.
focus on the number in recents and swipe up or down with one finger until you hear more info. Double-tap that with one finger. Swipe right with one finger until you hear create new contact. Double-tap again and you will be placed into the new contact field where you'll need to add at least a first name. You'll see that the number is added for you so you can simply double-tap the done button in the upper right-hand corner of your screen just below the battery status. hth
With 3D Touch, it has become easier for any user to add new contacts. Just press and hold the new number in Recents, and a pop-up will give you options to create a new contact or add it to the existing one. I wish I could share a screenshot here...

One more swipe right will give you the option to add that number to an existing contact
on your iPhone 6s and later
