In any software calculator I’ve used the ^ means “to the power of”. This doesn’t work in the iPhone calculator with a Bluetooth keyboard. Do you know what keystroke might indicate “to the power of”? Apple people don’t know!

Scientific mode
I have my iPhone locked in portrait, but if I remember correctly, putting the phone in landscape switches the calculator to scientific mode. If it still won't take your caret in scientific mode, I'm pretty sure there's an x^y button to support exponents.
