The Apple Watch app only really displays your current balances for whichever accounts you have specified in the Quick Balance settings of the IPhone app. It will only update the balances very occasionally for performance reasons. But you can ask to refresh the balances at any time by using the force-touch and double-tapping the Refresh Now button.
